Korean Restaurants Try Running Without Staff

Some restaurants in South Korea are trying to run without staff for part or all of the day. An October report described a barbecue restaurant in Yongin where customers grill their own meat, prepare soybean paste stew and collect side dishes during unstaffed hours. At a sushi restaurant in Seoul, customers choose packaged meals from refrigerated displays and pay at a kiosk. Owners say these systems can reduce labour costs when hiring workers is difficult or expensive. One owner of a beef bone soup restaurant reported cutting labour costs in half after making the change. Some businesses use a mixed approach, keeping staff during busy periods and relying on self-service at quieter times.

The idea can offer convenience, but it also gives customers more responsibility. Without an employee nearby, a customer may struggle if the payment screen stops working or an order is wrong. People who are less comfortable with technology may need help that is not immediately available. Food preparation and cleaning also require care, even when customers serve themselves. Owners must consider how to keep their restaurants safe and handle problems from a distance. Cameras and other monitoring tools can help, but they may raise questions about privacy. Lower labour costs also do not guarantee lower menu prices. Customers may welcome a cheaper meal, yet still want someone available when they need assistance. How much service are diners willing to give up?
